I’ve made this a few times from a  recipe I found on Green Kitchen.  It’s a quick to make alternative to dairy yogurt and is great with cereal such as granola and bircher or to go alongside a hot apple pie or similar.

Cashew Yogurt

Ingredients

Psyllium Paste
½tsp Psyllium husk powder
120ml Water

Main Mix
225g Cashew nuts (soaked for 8hrs)
4 Dried dates (soaked for 8hrs)
10tbsp Water
2tbsp Lemon juice
Pinch Salt

 

Method

Take the main mix ingredients and blend in a high speed blender along with 2tbsp of the psyllium paste.  Then simply chill in the fridge for use.
